Stesa la sfoglia all'uovo, con aggiunta di un grasso ( in questo caso olio d'oliva, ma potete usare lo strutto ) e preparati i carciofi stufati con aglio e prezzemolo, passati nella ricotta per ottenere una salsa, conservandone alcuni cucchiai per i raviolini.
Con gli appositi cannoli di metallo preparate dei cilindri di pasta da friggere in abbondante olio, che una volta raffreddati riempirete con la crema di ricotta e carciofi.
Io ho preparato parte della pasta mischiando anche del prezzemolo tritato per ottenere una sfoglia verde.
Con i resti della pasta ho inoltre riempito alcuni raviolini lasciando pero' i carciofi non frullati e ho fritto anche questi.
Piatto da servire anche freddo con guarnizione a piacere

Stretched out the fresh egg pasta, adding oliv oil ( but you can use lard ) and cooked artichokes stewed with garlic and parsley, blended with ricotta cheese to obtain a sauce, keeping a few tablespoons for making some ravioli.
With the appropriate metal cannoli prepare some cylinders to fry in hot oil, which when cooled will fill with the cheese and artichokes cream.
I prepared also green pasta by mixing the chopped parsley.
With the remnants of pasta I also filled some ravioli but leaving 'the artichokes smoothies and I fried them too.
Dish best served cold even decorating and serving it as you wish.
