- buccia di limone ( di mezzo limone )
- mandorle a fettine ( circa 100 gr )
- olio extravergine d'oliva ( 5 cucchiai )
La preparazione qui presentata è accompagnata da insalitina fresca e patate rustiche rosolate con pan grattato.

Hamburger di pollo alle amndorle con patate rustiche - Chicken with almonds served with rustic potatoes |
chicken breast (about 300g)
sliced bread (2 slices)
milk (50 cl)
grated Parmesan cheese (4 tablespoons)
egg (1 medium)
bread crumbs (2 tablespoons)
salt (1 teaspoon)
lemon zest (half a lemon)
sliced almonds (about 100 gr)
extra virgin olive oil (5 tablespoons)
Wet the sandwich bread with milk and squeeze it, then chop it in a blender togheter with the chicken. Add to the chopped the whole egg, salt, grated Parmesan cheese, grated rind of half a lemon (even a few drops of juice if you like) and a bit of dry bread crumbs to make the mixture. Formed to taste some big burgers, or nuggets, and at the end bread them with the sliced almonds. Cook in a pan with olive oil.
The preparation presented here is accompanied by fresh salad and rustic potatoes with browned bread crumbs.
